How can popular religious texts such as the Bible and the Quran moderate the beliefs that are presented in these texts to suit conventions and values of modern society, yet then still claim to be Muslim or Christian and claim that these texts are the word of god?

You really can't. Church doctrine does not conform to the secular and thus it is always at odds with "modern" secular thought despite the fact that much of what passes for innovations in secularism and relativism are simply regurgitations of the past.

On the matter of tour selected Bible references, you will note that they are taken from he Old Testament. Not to get into too much but the times and audience were different. As such many of the laws and penalties were either specific to the time and group and/or fulfulled in Christ (punishment paid for by Him on the Cross).
